Beryozovik

Beryozovik (birch kvass) is an old alcoholic beverage made from birch juice.

During the Grand Duchy of Lithuania and the Polish-Lithuanian Commonwealth, the gentry called birch juice «birch ukha», thereby they underscored its low social status. That's why this drink is mentioned in the culinary literature rather late, in the 19th century.

Nowadays, in Grodno region, real birch kvass is made mostly in spring in almost every village house. It doesn't have industrial production. Most local firms and organizations spill the so-called «birch juice».
